We visited for my wife’s birthday celebration.
This time, I’d like to introduce “Handmade Soba Shio-mi,” located near Tokyo Metro Waseda Station.
Actually, this is the restaurant where my daughters held my 60th birthday party for me this summer. It was such a great place that we decided to use it again for my wife’s birthday celebration.
It’s about a 7-8 minute walk from Waseda subway station.
It’s a relatively new restaurant, having opened in 2015.

This restaurant is popular for its soba kaiseki meals made with carefully selected ingredients!
“Handmade Soba Shio-mi” is a restaurant serving soba and Japanese cuisine, where our soba kaiseki course using carefully selected ingredients is popular.
On this day, we ordered the “Most Popular Basic Course” (¥13,000).
Every dish features wonderful seasoning that sincerely respects the ingredients without any gimmicks, making them truly delicious.
I’d like to introduce the dishes we enjoyed, including the explanations provided by the restaurant staff.
○Beef Tendon Chawanmushi
This chawanmushi, made with Oita Prefecture’s brand eggs “Ran-O,” is combined with tenderly simmered beef tendon.
It’s topped with a sauce made from fresh green laver from Lake Hamana.
The umami of the green laver and beef tendon spreads throughout your mouth, making it incredibly delicious.
The dishware is stylish too.


○Kōbako Crab
The main purpose of this meal was to enjoy this kōbako crab.
Kōbako crab served with a vinegar jelly is one of the pleasures of this season (I’m terribly sorry the photo is out of focus. To the restaurant staff, I apologize for the blurred image of such delicious crab).

○Buckwheat Flour Soup Bowl
This is the restaurant’s signature dish, made with broth simmered from sea bream bones, bursting with the fish’s rich umami flavor.
Enjoy the sweet aroma of finely ground buckwheat flour, the savory roasted sea bream flesh, and the deeply flavorful broth.
※The bowl lid had a mist spray on it. How chic.

○Marinated Yellowtail
Richly marbled yellowtail is marinated, with premium eggs adding depth and smoothness.
The contrasting textures with bean sprouts and daikon radish sprouts create a delightful experience.

○Salt-Grilled Sweetfish with Roe
The sweetfish with roe, grilled to a fragrant crisp, can be devoured whole, head first.
The rich, moist flavor of the roe fills your mouth.

○Duck Loin
Our duck loin, made from domestically sourced raw duck meat, is a popular specialty of this restaurant.
Enjoy tender meat with no gamey taste.

○Tempura
The tempura that day featured three items: shiitake mushrooms, sweet potato, and wild tiger prawns.
All were piping hot and delicious, but the tiger prawns were especially wonderful—you could really taste the sweetness of the shrimp.



○Soba
This restaurant’s signature finishing dish is hand-made 100% buckwheat soba using fresh buckwheat from Mount Akagi in Gunma Prefecture.
Remarkably, the owner personally visits the fields to select the buckwheat, using flour of exceptional quality.
Choose between “seiro” (steamed) or “kake” (soup).

○Dessert
Though not listed on the menu, dessert is included.
The mandarin orange daifuku was quite interesting.
Each was subtly sweet, making them perfect for a finishing dessert.
Also, a teacup is partially visible in the upper center of the screen.
I believe it was an Oribe-style cup.
My apologies if I’m mistaken, but it was a truly lovely teacup.

The above are all the dishes included in this restaurant’s “most popular, basic course.”
It was very filling and completely satisfying.
