After returning to Tokyo from a long stint working in the countryside, I headed to this restaurant to try some delicious soba in Tokyo.
This time, we report on Kanda Yabusoba in Awaji-cho, Kanda.

The origin of Yabusoba type, one of the three major buckwheat noodles in Edo

The so-called Yabusoba type is one of the three major types of soba in Edo along with the Sunaba and Sarashina types, and among them, Kanda Yabusoba is considered the headquarter of all soba restaurants named “Yabu” in Japan (it is probably the most famous soba restaurant in Japan).
The building was destroyed by fire and renovated in 2013, but this is the first visit including before and after the disappearance.

The deep taste of Yabusoba type of soba sauce

When I was young, I had an image of Yabusoba as being small in quantity and expensive, and I had no desire to go there, but now that I am older, I have an irresistible urge to go.
When I arrived at the restaurant, it was quite crowded and I waited outside for about 10 minutes.

I simply wanted soba noodles, so I ordered the Seiro Soba (750 yen) (menu as of May 2022).

This is my first Kanda Yabusoba, and first of all, the texture is softer than I expected.
It is not just a stretched softness, but a softness that makes you feel a certain elegance.
The soba-tsuyu (buckwheat sauce) was a little spicy like Yabusoba, and at first it did not seem to have much character, but as I ate it, I began to feel its depth and it continued to deepen until I finished the soba.

The whole soba, including the soba sauce, felt like it naturally entered my body, and I have never had such a feeling with soba before.
This is the power of a long-established restaurant.

About “Kanda Yabusoba

Kanda Yabusoba is a long-established buckwheat noodle restaurant in Kanda, Tokyo, established in 1880, and popular for its unchanged taste and technique for nearly 150 years since its establishment, with customers standing in line every day (currently using a numbered ticket system).

The business was shut down by a fire in 2013, but reopened in 2014.
In the reconstructed store, the fishing lanterns and signboards that remained after the fire were used as they were, and the board fence was removed to create a sense of unity between the store and the town.
Kanda Yabusoba is a restaurant that has transcended the ages and continues to convey the taste of a long-established restaurant with the motto, “Delicious soba with a pleasant ambience.
