There are many types of ramen, but when a survey is conducted on favorite ramen, shoyu ramen always comes out on top.
It is the very definition of ramen, and there is a very popular restaurant in Shimokitazawa that serves shoyu ramen.
This time we report on “Chuka-Soba Kotetsu,” which has won the Michelin Bib Gourmand award for five consecutive years.

One of Shimokitazawa’s leading ramen restaurants

The area around Shimokitazawa Station, known as a town where young people gather, is actually a hidden battleground for ramen.
Among them, “Chuka-Soba Kotetsu” is a very popular restaurant that draws a long line every day.
I was prepared to wait in line and visited the restaurant after midnight on a weekday, but I was able to enter without waiting in line.

I was not sure what to order until just before entering the restaurant and buying a meal ticket, but I ordered the “Special Chinese Soba” (900 yen) (price as of November 2022).

Awarded Michelin Bib Gourmand for 5 consecutive years

Soon after, the ramen was brought in front of me and I immediately took a bowl of soup.
The soup was a normal type that did not try anything strange, but it was very tasty.
The slightly thick soup was well mixed with not only the noodles but also all the ingredients, and it was very filling.
The clear soy sauce-based broth is fused with the delicious flavor of seafood and is indescribably delicious.
There was no oily feeling at all, and I enjoyed every last mouthful.

I think ramen evaluation depends a lot on personal taste, and this ramen was right up my alley.
No wonder it has been awarded the Michelin Bib Gourmand five years in a row since the Michelin Guide Tokyo 2020.

Owner trained at Yokohama Iekei Ramen restaurant (Tonkotsu Shoyu style)

The owner of this restaurant trained for nearly 10 years at a Yokohama-style ramen restaurant and opened his own restaurant in Shimokitazawa in 2016, but he decided to try his hand at shoyu ramen, which is his favorite type of ramen.
That’s why he decided to try shoyu ramen instead of Yokohama Iekei Ramen.
He is constantly improving his ramen to make it even better and better.
I wondered why there was no line for such a delicious dish, but it just happened to be an open slot.
By the time I left the restaurant, there was quite a long line.
