Miso ramen and tonkotsu (pork bone) ramen are also popular, of course, but shoyu ramen is the most popular.
The restaurant that is said to have mastered the art of shoyu ramen is “Chuka-Soba Shibata” in Sengawa.
This time, we will introduce you to one of the most popular shoyu ramen restaurants in Tokyo, “Chuka-Soba Shibata”.

I often refer to a guide book called “Setagaya Life” when choosing stores.
It mainly introduces information on restaurants and places of interest in Setagaya Ward, and I find this book quite useful because it introduces many good restaurants.
I found “Chuka-Soba Shibata” in Sengawa in this book, and it looked very good, so I decided to try it (by the way, the location of “Chinese Soba Shibata” is not in Setagaya Ward, just for fun 😄).

I had heard that it was a popular restaurant, so I was prepared to wait in line, but because it was raining, there was only one person waiting and I was able to enter the restaurant shortly after.

This is the real deal! The best ramen ever!”

Since I came at an opportune moment, I ordered the special (1,320 yen) with everything on top (price as of May 2022).

First, take a sip of the soup. It is a relatively normal type of soup, but very tasty.
It is a ramen that does not try to be strange, but rather, it is a ramen that is made in the way of the Chinese soba noodle.
I always think that it is no mean feat to make ramen that looks normal and yet is more highly regarded than others.
It is not difficult to imagine that the owner of this restaurant has arrived at this flavor after much research and study.

Charcoal-scented chashu pork, well-seasoned wontons and boiled eggs, and very tasty toppings.
Founded in 2013, Chuka-Soba Shibata won the Rookie of the Year Award at the TRY Ramen Awards, the industry’s highest authority, in 2014, and has since been selected as one of the 100 Best Restaurants by a major gourmet website for seven consecutive years, starting in 2017.
Why it is not listed in the Michelin Guide when it is so delicious is a great mystery.

It is located in a rather inconvenient place

It takes more than 10 minutes on foot from Sengawa Station.
There are no coin-operated parking lots nearby, making it very difficult to get there by car.
Although it is not conveniently located, it is a must-visit restaurant for those who love soy sauce ramen.
