There are various theories about the history of tempura, but it is said that the original form of tempura, in which fish and shrimp are battered and deep-fried, was established in the middle of the Edo period (1603-1868).
Tempura evolved over the course of the Meiji and Taisho eras, giving birth to Edomae Tempura.
Edomae Tempura is tempura made by deep frying fish caught in Edo Bay (Tokyo Bay) (tiger prawns, ginkgo, kiss, conger eel, kochi, goby, etc.) in 100% sesame oil.
