There are many local ramen restaurants in Japan, and one of them that I often visit is called “Gamushara” in Hatagaya.
This time, I will report on Gamushara, which serves Nagaoka ginger soy sauce ramen with an impressive, fresh ginger flavor.

After various trials and errors, the current style was developed.
When I used to go to Gabushara in 2012, it had a unique style of business where the ramen (and the name of the restaurant) changed depending on the day of the week.
I was not able to visit the restaurant during my long stint in the region, so this was my first visit in about 10 years, and it seems that the restaurant is no longer operating in the style it once did.
Although “Gamushara” has established itself as a popular ramen restaurant, it seems that there have been many efforts, innovations, twists and turns to get there.
Gamushara had evolved even further.
At the time when I used to go there, Gamushira was not yet as famous as it is today, but I found its punchy ginger soy sauce soup very tasty even then.
I used to order the ginger soy sauce, but on this day I ordered the back fat ginger egg ramen (1,100 yen), which was not on the menu back then (menu as of January 2024).
Compared to the ginger shoyu, the back fat ginger ramen had a milder flavor with the addition of back fat and did not disappoint.
Punchy ginger soy sauce ramen
Incidentally, I was honestly surprised when I first saw the ginger soy sauce ramen I had in the past, because it was like ramen noodles soaked in a pitch-black soup.
When I tried it, I found it to be a kind of revolutionary ramen for me, with a clear, contoured soy sauce soup with a tangy soy sauce curd (the image below was taken in June 2012).
I was completely fascinated by this unique ramen, and at the time I was in a state of “Gamushara Ramen addiction”.
The back fat ginger egg ramen is milder and I personally prefer the ginger soy sauce ramen.
However, this is a matter of taste, and both ramen are very tasty, so if you like soy sauce ramen or want to warm up with ginger soup in the cold of winter, you should definitely visit the restaurant.

At that time, there was only one store in Hatagaya, but today, Gamushara has opened franchise stores in Kamata and Yotsuya, and you can enjoy the taste of “Gamushara” in other places as well.
