About the History of Edomae Tempura

〇The Birth of Edomae Tempura
There are various theories about the history of tempura, but it is said that the original form of tempura, in which fish and shrimp are battered and deep-fried, was established in the middle of the Edo period (1603-1868).
Tempura evolved over the course of the Meiji and Taisho eras, giving birth to Edomae Tempura.
Edomae Tempura is tempura made by deep frying fish caught in Edo Bay (Tokyo Bay) (tiger prawns, ginkgo, kiss, conger eel, kochi, goby, etc.) in 100% sesame oil.

〇The oldest existing tempura restaurant is in Asakusa!
The oldest existing tempura restaurant in Japan is “Kaminarimon Sansada” in Asakusa.
Founded in 1837 during the Edo period (1603-1868), it has a history of more than 180 years. It is a famous restaurant that preserves the traditional taste and conveys it to the present.
The most popular item is the “Kamitendon” (top tempura bowl). Shrimps and kisses, freshly procured from Toyosu every day, are deep-fried in a unique sesame oil for an outstanding savory taste.

That restaurant is “Mikawa-Zezankyo” in Monzennakacho, owned by Tetsuya Saotome, who is also known as the “God of Tempura.
The tempura created by Mr. Saotome’s beautiful and lean gestures is said to be already in the realm of art.
Mr. Saotome was born in 1946. She will soon be 80 years old. I have a strong desire to try his work of art tempura while he is still in good health.
